Avocado Salad

Avocados are an excellent source of healthy fats, fibre and vitamins. Research suggests there may be other benefits of consuming this delicious fruit, such as lowering cholesterol levels, reducing risk of diabetes, weight loss and preventing cancer. This salad is simple, nutritious & delicious! Enjoy!  

Avocado Salad  
1 avocado - chopped  
2 tomatoes - chopped  
1/4 c red onion - chopped  
1/2 c yellow pepper - chopped  
1 tsp lemon  
1 tbsp balsamic vinegar  
1 tbsp extra virgin olive oil  
Himalayan salt & pepper  
Combine & serve on a bed of organic leafy greens.
